A Hungarian Christmas favourite part 2: Rákóczi’s cake with cottage cheese – Rákóczi túrós

Last time, we gave you the an easy recipe of the iconic poppy seed bread pudding (mákos guba). This time, the dessert at hand is a bit more complicated to make – but just as delicious! Read on for the recipe of Rákóczi túrós (Rákóczi’s cake with cottage cheese).
As 5percangol.hu writes, Rákóczi túrós was named after a confectioner named János Rákóczi. He was a big name at the time: he worked all around Europe’s best restaurants. His dessert debuted in 1956 at the world exhibition in Brussels. Ever since then, the Rákóczi túrós remains one of Hungary’s specialties.
Ingredients
For the dough
- 30 dkg flour
- 15 dkg margarine
- 10 dkg icing sugar
- 2 egg yolks
- 1 pinch of baking soda
- 1 pinch of salt
- 1 dl sour cream
For the filling
- 50 dkg cottage cheese
- 10 dkg granulated sugar
- 3 tablespoons of semolina
- 2 egg yolks
- 1 dl sour cream
For the top
- peach jam
- 4 egg whites
- 15 dkg icing sugar
