According to Origo.hu, one possible way of handling the midlife crisis in case one does not have the financial means to buy a new sports car, is to tick out each item on the gastronomy bucket list. There is no need for eating bugs and crickets. The traditional Hungarian cuisine provides just enough possibilities for lovers of bizarre dishes.

Tripe, marrow tripe

We are starting with the king of divisive foods, the stomach of the cattle which is either loved or mocked as a terry cloth. Some people are not willing to try it at all. But who dies without tasting tripe at least once in their lives is missing out on an important experience.

Tripe soup

Since tripe, unlike hooves, does not solidify sauces, in Erdély, it is used to cook a picante, sour “csorba”.

Tripe with knuckle or hooves

In this dish, two or three ingredients are put together which can, in themselves, put some picky eaters in a state near a crying fit. Nevertheless, nothing better can happen with the tripe soup than thickening it with the collagen released during cooking from the knuckle and/or the hooves.

Brain soup from Erdély

A traditional recipe from Erdély, for times of feast on pig-killing days. It is made with sour cabbage-pickling brine, pig brain, and meatballs.
